This week, I figured we could start with a snack: Bruschetta. I LOVE this dish, because you can eat it as a snack, an appetizer, or as a meal! How fun is that?

1 fresh loaf Italian bread or French Baguette
4 cloves garlic
½ C olive oil
4 large plump tomatoes (diced)
¼ C crumbled goat cheese
3 T chopped fresh basil
¼ C balsamic vinegar reduction
Sea salt to taste


Slice bread into 1/4-inch thick pieces at an angle. Place on a baking sheet. Sprinkle a little bit of olive oil onto the bread. In a preheated oven of 400oF, place baking sheet of bread into the oven and bake for about 5-10 minutes, until golden brown. Take a clove of garlic and rub the clove onto a piece of warmed bread. Use all the garlic cloves to finish rubbing all the bread. Spread crumbled goat cheese onto pieces of bread. Arrange diced tomatoes onto bread.Place onto serving platter. Sprinkle chopped basil onto tomatoes.Drizzle olive oil and balsamic vinegar reduction on to the Bruschetta. Crack a little sea salt onto your Bruschetta. Serve immediately.
