Medium shallow bowl
Jar for dressing

Ingredients:

Salad:
4 Cups baby spinach
1 Mango (large dice)
1 Chicken breast (cooked/shredded)
1/2 Cup tomatoes (diced)
1/2 Cup sliced onions
1/4 Cup almonds
1/4 Cup fresh parsley (sliced)
1 T fresh basil (sliced)

Dressing:
1/2 Cup lemon juice
1/2 Cup extra virgin olive oil
2 T honey
Salt and peper to taste

Instructions:

Prepare all of the salad ingredients as directed and place in separate piles or separate bowls. Place the spinach in the bottom of a medium shallow bowl. Layer chicken on the salad. Place the mangos in the middle. Scatter remaining ingredients in the following order-tomatoes-onions-almonds-parsley-basil-salt and pepper. Prepare salad dressing in a jar. Shake real well. When you are ready to serve-pour half of the dressing on the salad. Do not toss as it messes up the presentation! Serve remaining dressing on the side.
