4 Boneless, skinless chicken breasts
2 pieces of bacon (halved)
4 slices of chipped beef (very thinly slices of beef)
1 pint sour cream
1 can cream of mushroom soup
1 can mushrooms (drained)
1 small jar of chopped pimento
2 1/2 cups of rice, long grain preferably


Flatten chicken breast with edge of plate. Place chicken breasts in the baking dish. Place a slice of beef on each breast and roll up jelly roll style. Lay ½ slice of bacon on each chicken roll. Combine remaining ingredients in a bowl and then spoon over the chicken rolls. Secure foil on the dish and place in the oven for 1 hour at 350 degrees. Measure 2 1/2 cups of rice and follow the cooking instructions on the package. (Note: You can also use brown rice in this recipe). To serve, place scoop of rice on plate and top with chicken roll.
