Ingredients:
2 C Jasmine rice
2 Tbsp extra virgin olive oil
grated zest of 2 lemons
1/2 C fresh parsley
2 tsp coarse salt
4 tsp fresh lemon juice
3 medium tomatoes
3 Tbsp Balsamic vinegar
1 Tbsp brown sugar
3 large carrots
3 C mushrooms
1/3 C parsley
2 Tbsp lemon zest
Instructions:
Prepare rice as directed. When cooked, add the remaining ingredients to the rice and mix them well.  Then serve.
