Season 01 Episode 01- “Papillote”
In Episode 1 of Remmi’s new series, “The Culinary Kid” Remmi learns the cooking technique of “en papillote” from Chef Tim Richards of Bodeans Seafood Restaurant. She then travels to Bodean’s Seafood Market where she is introduced to the seafood that is available and flown in daily to their market. Remmi then prepares her dinner in her test kitchen. Her menu is Cod en Papillote, Green Salad with Vinaigrette Dressing and French Bread with Olive Oil and Balsamic Vinegar. Chef Tim comes to the test kitchen to taste test Remmi’s meal and determines her grade.
Season 01 Episode 02 – “Pasta”
In Episode 2 Remmi learns how to prepare pasta from Chef Michael Fusco of Fusco’s Restaurant. She then travels to Pozza’s Pasta Factory where she learns how to make fresh pasta. Remmi then prepares her dinner in her test kitchen. On her menu is her signature dish, Angel Hair Pasta with Pancetta Sauce, accompanied with Caesar Salad and French Bread. Chef Michael comes to the test kitchen to the test kitchen to taste test Remmi’s meal and determines her grade.
Season 01 Episode 03 – “Braising”
In Episode 3 Remmi learns the cooking method of “braising” from Chef Richard Schlosberg of Wolfgang Puck’s Bistro. She travels to Natural Farms to learn about organic farming practices and their choice to raise Piedmont Cattle. Remmi then prepares her in her test kitchen. Her menu is Braised Beef with Vegetables and Mashed Potatoes, and Salad with Oranges and Marmalade Vinaigrette.
